Baked Salmon
Baked Salmon

Many of you have been asking about my baked salmon recipe... well, it's VERY simple and fast - so here you go ;)
-----
You'll need the following:

  • Salmon fillet (I buy mine from Sam's - freezer section, individually wrapped and around $17 per bag)
  • 1 pat of butter (or margarine of your choice) per fillet
  • McCormick's salmon seasoning (can be found at Jewel - if not available, use Weber Salmon Sweet & Savory seasoning)
  • 1 slice of lemon
  • 1 slice of onion (yellow or white)
  • 1 piece of aluminum foil if grilling, or small baking pan if using oven

If grilling, use the foil as your base - otherwise any baking dish will do. Do a quick spray of non-stick spray if using pan. Place onion slice on bottom (separate onion layer so that the entire fillet will lay on a bed of onion). Season both sides of the salmon fillet with the recommended seasoning and place on the single layer of onion. Place the pat of butter or margarine on the fillet. Over the top of the butter, place the single slice of lemon.

Pre-heat oven to 400 degrees and once ready cook for a full 15 minutes on the middle rack. No need to cover pan, just cook until the butter is fully melted and the fillet and lemon are lightly brown. If grilling, fold up sides of foil to fully encase fillet (use enough foil that it is loosely encasing the fillet - you'll want room for the steam to build inside the foil pouch). Let sit on the grill for 15 minutes - don't worry if you see some smoke, it's the onions caramelizing.

WATCH FOR THE FULL PRINTED LIST OF VOLUNTEER APPRECIATION LUNCHEON RECIPES COMING SOON, thanks to Sandi Hively.

Client Stories with Sue Ekins

Some of us work behind the scenes, not directly with clients. I will occasionally share a brief story about the impact of your volunteer work on a client. The name has been changed to respect the client's privacy. Client care volunteers, please notify me if you have a client with an interesting story, who might be willing to be interviewed. Thank you! -  Sue Ekins

In 2006, Camilla fell and broke her neck in five places. The surgery and months of rehab for spinal cord injury caused her and her husband to lose everything. Her husband was an immigrant from Africa and did not have his papers yet, so he could not work in the United States despite having a degree. He also became ill due to bad teeth and weighs 100 pounds. For a while, the family had to split up while Camilla lived with her sister, and her husband lived in a church office.

They are now back together, but Camilla cannot pass a physical for employment. She says, “This has been very humbling. I have to accept that I can’t work anymore. After working all my life, it’s depressing. In the past, I often worked 2 or 3 jobs at a time. I've learned that at some point in your life, you need someone to help you.” [READ FULL STORY - CLICK HERE]

Worth Talkin' About...
  • A special "Thank You" to one of our dedicated truck crew, Mike Dial, for nominating us for a $1,000 Allstate grant that we received.
  • January -March 2010, we have increased the amount of people benefiting from our services by 129% over the same time period in 2009 (1,054 vs. 461). Yes, you read the right! That also translates to seven times more seniors than in 2009.
  • Since January of 2010, we have already provided over 190 sofa & loveseats along with over 360 cribs and mattress sets!

Sharing the Great Experiences

Here is the newest batch of kind words we've received!

  • "Thank you so much for allowing me to come to your organization for clothing. Donna K. drove me there and together we found some really great items. You provide an invaluable service to the community and I consider myself lucky to have had an opportunity to use your services." - Patty C.
  • “I would like to thank you for the help you have given me. I really appreciate it because I needed these things. I have no way of repaying you for this help. There are few people in the world who are like you and help others. I hope that God gives you health and good luck in all your hopes and wishes. I hope you keep having a big heart to help people who need your help. Again, thank you for all your help.” – Maria G.

Great Job Everyone!

Lights...Camera...Action!

We have recently been presented with a fantastic opportunity for Sharing Connections Furniture Bank!

Over the coming weeks, we will be working with a gentleman by the name of Sadru Patel who will be donating his services to create a new dvd. This new dvd will help us tell our story and you can play an important part! We are looking for old photos of Sharing Connections in the early days - from Leeanne's garage to warehouse pics and great pics of volunteers. We're hoping to incorporate a glimpse into our history using these pics.

Contact Sandi Hively at 630-971-0565, x229 or email her directly at shively@sharingconnections.org

Change...

Two staff members have recently left the organization. We appreciate the services of Regina Carballo and John O’Gara. The Board and Management of Sharing Connections Furniture Bank also appreciates our committed volunteers as together we serve families and individuals in need. We continue to address new issues as we stay true to the guiding principles of Leeanne McGrath under the leadership of the Board of Trustees, where she is an active member.

Appreciation Warm Fuzzies...

The time I've been with Sharing Connections Furniture Bank is always put into perspective each year during the volunteer appreciation luncheons. Not only am I continually surprised at how fast time flys by - but how enjoyable the volunteers make it to be here each day. Okay, so it's awesome eating a feast, but as a staff member it's amazing to watch a room full of volunteers interact and realize that for the people around the table, it's really grown into much more.

I truly see that it's developed into an extended family of people that really enjoy working together - enjoying each others company and laughter - and enabling us to directly benefit 4,000 individuals last year alone. When I talk with potential donors I find myself expressing the success of SCFB in terms of starting from Leeanne's garage and growing to over 9,000 square feet of working space - and it's times like this that remind me to never forget to measure our success in terms of the volunteer family that has grown year after year - so thank you for the reminder and thank you for including me day after day in this experience.

Now that we're pretty much family...does this mean I can borrow $10?

Until next time ;)
